Chicks Go To Montauk, Beer Cocktail


A bright, layered summer highball inspired by Tiki Chick, Dos Maderas, and Montauk vibes.

THE INSPIRATION:

This cocktail started as a Dos Maderas Women’s Month cocktail feature called Golden Girls, where I decided to use tamarind since we didn’t have anything on the menu lately with that flavor. One day, I went to a market in Chinatown and found kumquats, which I had not used in a cocktail before. We also had some leftover golden kiwis at Tiki Chick that I wanted to use before they spoiled.


One of our captains, Marissa, remembered a beer cocktail I had featured for Earth Month a few years ago and had been pushing for another one ever since. In my experience, tropical and fruity flavors pair beautifully with the hops in an IPA.


Eventually, the Golden Girls became so popular that she suggested putting it on the new summer menu flip. However, we felt it needed a new name relating to Tiki Chick. We go every year to Montauk Brewery for the summer staff trip, and so it was only fitting to name this cocktail Chicks Go to Montauk.


THE EXPERIENCE:

This cocktail has fruit flavors from kumquats and golden kiwi that marry with the mango and pineapple notes in the IPA, and the dried apricot flavor of the Dos Maderas. The bitterness of the hops provides a bite, so the cocktail isn’t overly sweet.


The tamarind also adds a tanginess to balance the sweeter flavors.


So many bright flavors and layers create a thirst-quenching experience perfect for a day at Tiki Chick — one that makes you feel like you’re on Montauk beach.


Ingredients:


Method:

Shake all but IPA. Add IPA to tin. Strain over Kold Draft ice.

Glass: Highball

Garnish: Candied kumquat & marigold


Subrecipes:

Golden Kiwi Kumquat Oleo:

  • 500g granulated sugar

  • 200g halved kumquats

  • 2 chopped golden kiwis (no skin) Macerate all in a Ziploc. Submerge in hot water until sugar dissolves. Strain. Save kumquats for garnish.


Tamarind Acid:

  • 1000ml Goya Tamarind Nectar

  • 60g acid blend (1 part malic : 2 parts citric)
